Meandering egg discussion yields cheese spread recipe

A discussion on the Record-Eagle Food Blog started out talking about how people like their eggs and meandered around several other topics including how to cook bacon and a good recipe for Pimiento Cheese Spread.

Pimiento Cheese Spread

  • 1 (8-oz.) package cream cheese, room temperature
  • 8 oz. grated sharp cheddar
  • 8 oz. grated extra sharp cheddar
  • 1/2 c. mayonnaise
  • 1/2 t. each garlic powder, onion powder, coarse salt, fresh ground pepper
  • 1 (4 oz.) jar pimientos, with juice from jar
  • 1/2 small onion, grated
  • Additional cracked black pepper to taste

Combine the cream cheese, mayonnaise, grated onion, garlic powder, onion powder, coarse salt and fresh ground pepper in the bowl of your food processor that has been fitted with a blade. Pulse until smooth. Scrape down the sides of the bowl and add the shredded cheddar. Pulse 7 or 8 times until the cheese is mixed in but not completely blended. Scrape down bowl again, and add the pimentos. Pulse 4 or 5 times until the pimentos are chopped to a medium texture. If you process too much, you'll just have pink cheese spread.
