06/25/2007Recipe of the WeekChicken at Mary Lou'sMrs. Thomas MacLean of Cedar sent in today's recipe for Chicken at Mary Lou's. She said it's ideal for family gatherings and can be made in advance. MacLean said she gets many requests for the recipe. Chicken at Mary Lou's
Grease 9-by-13-inch casserole dish. Cut chicken breasts in large chunks. Beat eggs and marinate chicken in egg overnight. The next day, mix bread crumbs, garlic powder and parsley in plastic bag. Drain chicken pieces and put in crumb mixture and shake well. Brown in oil, drain on paper towel and place in casserole dish. In separate bowl, dissolve bouillon cubes in hot water. Layer mushrooms and cheese and pour bouillon mixture over all and cover with foil. Bake 1&1/2 hours at 350°. Remove foil and stir thoroughly, blending cheese and juices. Put back in oven for a few minutes. Good served with rice or redskin potatoes. Serves eight. Enjoy cooking? How would you like a new apron?
