Recipe of the Week

Sugar-Free Rhubarb-Strawberry Salad

Today's recipe comes from Kaye Welch of Frederic.

"I bring this salad to family reunions for people on low-sugar diets,” she writes. "Everyone likes it.”

Sugar-Free Rhubarb-Strawberry Salad

  • 3 c. diced rhubarb
  • 1 pint strawberries, hulled and halved
  • 1 c. water
  • 1 (3-oz.) package strawberry sugar-free Jell-O
  • Sugar substitute

In a saucepan, combine rhubarb, strawberries and water. Bring to a boil. Reduce heat and stir in sugar-free Jell-O.

Cook over low heat until rhubarb is tender. Sweeten to taste with sugar substitute. Pour into a glass serving dish. Chill until firm.
